Sometimes I wish the stories behind my recipes were more inspiring but real talk, this recipe came to mind after wanting Peanut Butter and Chocolate Ice Cream and not being able to have because, well, I don’t eat 90 percent of the shiz inside store bought ice cream. So I figured I would put my skills to use and make my own version but in true Bunny fashion, pump up the nutritional composition.
I chose to use raw cacao powder as opposed to cocoa powder, for a few reasons. For starters, I always do. Ha. Raw Cacao is cocoa beans that have been cold pressed, leaving all the antioxidant rich living enzymes intact. It also is a mood booster (your brain reacts the same way as if you were falling in love), and it is loaded with minerals.
Maca Root is an aptaogen meaning, is belongs to a class of plants that help heal and restore how the body responds to stress. Maca is an extraordinary superfood when it comes to balancing hormones and providing an energy boost. It tones your cognitive ability and improves sexual function – I incorporate a daily dose into my diet. Lucuma, the other Peruvian superfood used in this recipe, is distinctively sweet and has powerful anti-inflammatory effects. Loaded with trace elements and minerals, Lucuma also supports cellular health and improves skin and digestion. I also used spirulina in this recipe. It is a blue green freshwater algae, that honestly smells like pond scum but I promise the taste is masked! lol I talk a bit about its medicinal superfood benefits in this post.
This was hands down one of my favorite smoothie (bowls) ever created and the fact that it was incredibly good for my body and loaded with healthy fats, makes things even better!
Try this and Enjoy!
- 2 frozen bananas
- 1 cup fresh coconut meat (*if you don't have you can use the contents of 1 can CHILLED coconut milk)
- 1 cup almond milk
- 3 tbs raw cacao powder (NOT COCOA POWDER)
- 1/2 tsp spirulina
- 1 tbs maca root
- 1 tsp lucuma
- 2 soaked dates plus 1 tbs soaking liquid
- 4 tbs almond butter
- cacao nibs
- dehydrated berries
- desiccated coconut
- pumpkin seeds
- Combine all ingredients into a blender or food processor
- Blitz, top and eat!
- the adaptogen and superfood powders are optional but really are the essence behind the nutritional punch to this recipe.
