Hands down, Ottolenghi is one of the greatest chefs to ever walk this Earth. His flavor nuances are mind blowing and often so subtle that they are genius. I’ve been making these sprouts, with my own twist, for a bit now. I often add walnuts or mint and cilantro to complement the tart pom seeds with the bitter sprouts. This dish is wonderful.
Okay, so this is one of my dishes but it works! Carrots are wonderfully abundant this time of year and why not make them shine by pairing them with a wonderfully umami rich tahini miso spread?
This dish is quite similar to something I make all the time. Except I add mushrooms and a few more aromatics. I LOVE acorn squash and stuffed with quinoa means you are getting all the plant based protein your body needs. Win!
